Medium leaf chives, also known as garlic chives, are a type of herb that are similar in appearance to regular chives but have a slightly different flavour profile. They have flat, grass-like leaves that are wider than regular chives and a delicate garlic flavour with a hint of sweetness. Like regular chives, they are often used in cooking as a garnish or to add flavour to dishes. However, garlic chives are particularly well-suited for Asian cuisine and are commonly used in Chinese and Vietnamese dishes. They can be chopped finely and used in stir-fries, soups, and dumplings, or used as a flavourful addition to salads and dressings. Garlic chives are also a good source of vitamins A and C, and contain antioxidants that may help protect against certain types of cancer. They are easy to grow and can be grown indoors or outdoors.

Sowing and Growing Guide

Chives Medium Leaf

Indoor Sowing:

  • Sow seeds indoors in trays or pots around 6-8 weeks before the last spring frost.
  • Fill the tray or pots with seed-starting mix and sprinkle the seeds on top. Cover with a thin layer of soil.
  • Keep the soil moist and place the tray or pots in a warm, bright location or under grow lights.
  • The seeds should germinate within 7-14 days.
  • Thin the seedlings to about 2-3 inches apart when they have developed their first true leaves.
  • Transplant the seedlings to larger pots when they outgrow their starter containers, or move them outdoors when the soil has warmed up and there is no longer a risk of frost.

Outdoor Sowing:

  • Sow seeds outdoors in early spring or fall, when the soil temperature has reached at least 60°F (15.5°C).
  • Choose a sunny or partially shaded location with well-draining soil.
  • Plant the seeds in shallow trenches about 1/4 inch deep and 1 inch apart. Cover with a thin layer of soil.
  • Keep the soil moist and thin the seedlings to about 6 inches apart when they have developed their first true leaves.
  • Harvest the chives when they are about 6-8 inches tall, leaving at least 2 inches of foliage to allow the plant to continue growing.

Growing:

  • Chives prefer well-drained soil with a pH between 6.0 and 7.0. Add organic matter such as compost or aged manure to improve soil quality.
  • Water the plants regularly, keeping the soil evenly moist but not waterlogged.
  • Fertilize the plants every 4-6 weeks with a balanced fertilizer.
  • Pinch back the flowers when they appear to encourage the plant to produce more leaves.
  • Harvest the chives by cutting the leaves with scissors or pruning shears, leaving at least 2 inches of foliage to allow the plant to continue growing.
