Green Stem pak choi, also known as Bok Choy or Chinese cabbage, is a leafy green vegetable that is commonly used in Asian cuisine. It is characterized by its dark green leaves and thick, crisp green stems. The leaves have a mild, slightly sweet flavor, while the stems offer a refreshing and crunchy texture. Green Stem pak choi is versatile and can be stir-fried, sautéed, steamed, or used raw in salads. It is rich in vitamins A, C, and K, as well as various minerals. It is a relatively easy plant to grow and can be harvested when the leaves are young and tender, typically around 6-8 weeks after planting.

Sowing and Growing Guide

Pak Choi - Green Stem

Indoor Sowing

  • Start seeds indoors 4-6 weeks before the last expected frost date.
  • Fill seed trays with seed starting mix and sow seeds 1/4 inch deep.
  • Keep the soil moist and at a temperature of 70-75°F for optimal germination.
  • Seedlings should emerge in 7-14 days.
  • Once seedlings have developed their first true leaves, thin them to one per cell or transplant them to individual containers.
  • Transplant seedlings outdoors when they are 3-4 weeks old and have 4-6 leaves.

Outdoor Sowing

  • Sow seeds directly into the garden after the last expected frost date.
  • Choose a location with partial shade to protect the plants from excessive heat.
  • Prepare the soil by loosening it and removing any debris.
  • Sow seeds 1/4 inch deep and 6-8 inches apart in rows spaced 12-18 inches apart.
  • Keep the soil evenly moist throughout the germination and growing process.
  • Thin seedlings when they are 2-3 inches tall, leaving 6-8 inches between plants.

Growing

  • Pak Choi prefers well-draining soil and consistent moisture.
  • Water regularly to keep the soil evenly moist, especially during hot and dry periods.
  • Apply a balanced fertilizer every 3-4 weeks to promote healthy growth.
  • Provide partial shade or use shade cloth during hot summer months to prevent bolting.
  • Harvest the outer leaves when they reach desired size, usually around 6-8 weeks after sowing.
  • For continuous harvest, pick outer leaves while leaving the inner leaves to grow.
