Perpetual spinach, also known as leaf beet, is a leafy green vegetable that is related to spinach and chard. It is a variety of Beta vulgaris, the same species that includes beets and chard. Perpetual spinach is often grown as a cut-and-come-again crop, which means that you can harvest the leaves as needed and the plant will continue to produce new growth. The leaves are dark green and can be cooked like spinach or used raw in salads. Perpetual spinach is a good source of vitamins and minerals, including vitamin C, iron, and calcium.

Sowing and Growing Guide

Perpetual Spinach

Indoor Sowing

  • Start seeds indoors 4-6 weeks before the last expected frost date.
  • Fill seed trays with seed starting mix and sow seeds 1/2 inch deep, 2-3 seeds per cell.
  • Keep the soil moist and at a consistent temperature of 60-70°F.
  • Seedlings should emerge in 10-14 days.
  • Once seedlings have developed their first true leaves, thin them to one per cell.
  • Transplant seedlings outdoors when they are 3-4 inches tall and have at least two sets of true leaves.

Outdoor Sowing

  • Sow seeds directly into the garden 2-4 weeks before the last expected frost date.
  • Choose a location with well-draining soil that has been amended with compost or well-rotted manure.
  • Sow seeds 1/2 inch deep and 2-3 inches apart in rows spaced 12-18 inches apart.
  • Keep the soil moist and weed-free.
  • Thin seedlings when they are 3-4 inches tall, leaving 8-10 inches between plants.

Growing

  • Perpetual Spinach prefers well-draining soil that is rich in organic matter.
  • Water consistently to keep soil evenly moist but not waterlogged.
  • Fertilize once a month with a balanced fertilizer.
  • Harvest outer leaves when they are 4-6 inches long and have reached their full color.
  • Leave the center leaves to continue growing.
  • Store harvested leaves in a plastic bag in the refrigerator for up to a week.
