Pak choi white stem, also known as Bok Choy or Chinese cabbage, is a popular Asian vegetable that has succulent stems and mild flavor. It is a cool-season vegetable that thrives in well-drained, fertile soil and prefers cool temperatures. The plants have attractive deep green leaves with white stalks. Pak choi white stem produces small to medium-sized heads that are typically ready to harvest in around 45-50 days. The stems are thick and have a mild, slightly sweet flavor that is perfect for stir-fries. The leaves are also edible and can be used in a variety of dishes. Indoor sowing:

  • Sow seeds indoors 4-6 weeks before the last frost date.
  • Plant 2-3 seeds in a small container or cell, 1/4 inch deep.
  • Keep the soil moist and at a temperature of 60-70°F until germination, which usually takes 7-14 days.
  • Once the seedlings have their first set of true leaves, thin to one seedling per container.

Outdoor sowing:

  • Sow seeds directly in the garden 2-4 weeks before the last expected frost date, or as soon as the soil can be worked.
  • Plant seeds 1/4 inch deep and 2-3 inches apart in rows spaced 12-18 inches apart.
  • Keep the soil moist until germination, which usually takes 7-14 days.
  • Once the seedlings have their first set of true leaves, thin to one seedling every 6-12 inches.

Growing:

  • Pak choi prefers partial shade and well-drained soil with plenty of organic matter.
  • Water regularly, especially during dry periods.
  • Fertilize with a balanced fertilizer every 3-4 weeks.
  • Harvest the outer leaves when they are large enough, or wait until the heads are fully formed.
