Greyhound Cabbage is a popular variety of cabbage that is known for maturing early and having a compact size. It is a cool-season vegetable that can survive frost and thrives in well-drained, fertile soil. The plants can grow up to 1-2 feet tall and have attractive blue-green foliage. Greyhound Cabbage produces small to medium-sized heads that are typically ready to harvest in around 60-70 days, making it a great choice for gardeners with limited space or those who want an early harvest. The heads are round and firm, with a sweet, mild flavor that is perfect for salads, slaws, or stir-fries. Greyhound Cabbage is also a great source of nutrients, including vitamin C, vitamin K, and fiber.

Indoor sowing:

  • Sow seeds indoors 4-6 weeks before the last frost date.
  • Plant 2-3 seeds in a small container or cell, 1/4 inch deep.
  • Keep the soil moist and at a temperature of 60-70°F until germination, which usually takes 7-14 days.
  • Once the seedlings have their first set of true leaves, thin to one seedling per container.

Outdoor sowing:

  • Sow seeds directly in the garden 2-4 weeks before the last expected frost date, or as soon as the soil can be worked.
  • Plant seeds 1/4 inch deep and 2-3 inches apart in rows spaced 12-18 inches apart.
  • Keep the soil moist until germination, which usually takes 7-14 days.
  • Once the seedlings have their first set of true leaves, thin to one seedling every 12-18 inches.

Growing:

  • Cabbage prefers full sun to partial shade and well-drained soil with plenty of organic matter.
  • Water regularly, especially during dry periods.
  • Fertilize with a balanced fertilizer every 3-4 weeks.
  • Harvest the cabbage heads when they are firm and fully formed.
